We stayed for 3 nights at Nilada, which has friendly and hospitable operators and is located very close to the car park and windmills on the Greek Quarter side. It was a great advantage that it was a 2-minute walk from the center and at the same time away from crowds and noise. The delicious breakfasts we ate in different varieties from Ms. Ayşe every morning were also very nice. If you ever go to Bozcaada, we recommend it :)
